How it all started
Get to know the owners Alfred & Sally Punzalan and their family!
The Punzalan family is one of the largest Filipino families in the UK, with 44 members in our immediate family the last time we counted.
Our founder, Alfred Punzalan began his culinary journey after arriving in London from Tarlac, Philippines, in 1987 at the age of 16.
One of Alfred's favourite stories is that he didn't even know how to boil an egg when he first arrived in the UK. Leaving the Philippines at such a young age meant he missed the opportunity to learn from his beloved grandmother, Apung Delang, whose home cooking would later become a lasting source of inspiration.
Today, that passion for authentic Filipino food lives on at INIHAW, where family recipes, tradition, and warm Filipino hospitality continue to bring people together around the table.
Our Story in Pictures
OUR MISSION
Since opening our doors, INIHAW has remained committed to introducing the rich flavours and traditions of Filipino cuisine to communities across London and, ultimately, the United Kingdom.
Today, the vast majority of our guests are discovering Filipino food for the very first time, with around 80% of our customers coming from non-Filipino backgrounds. Seeing so many people embrace our cuisine is something we're incredibly proud of, and it continues to inspire everything we do.
Among our most popular dishes is our signature Lechon Kawali — perfectly crispy on the outside, succulent on the inside, and served with our homemade liver sauce, prepared from scratch rather than using bottled alternatives. Close behind is Alfred's Signature Barbecue Pork, a family favourite that has become one of INIHAW's most requested dishes.
As we continue to grow, our mission remains the same: to share the warmth of Filipino hospitality and the unforgettable flavours of the Philippines, one meal at a time.
